  • Preserved lemons: 1-2, quartered.
  • Green or black olives: A handful.
  • Fresh parsley and cilantro: Chopped, for serving.

  • Olive oil: 3 tablespoons.
  • Water: About 1.5 cups.

Preparation Method:

1. Preparing the Base:

  • Heat olive oil in the base of the tajine (or a heavy-bottomed pot if a tajine is unavailable).
  • Add the chopped onions and garlic, sautéing until softened and fragrant.
  • Place the meat or chicken in the center, and sprinkle with spices (ginger, turmeric, paprika, cinnamon, salt, and pepper).

2. Layering the Vegetables:

  • Arrange the vegetables around and over the meat in layers, starting with firmer vegetables like potatoes and carrots, followed by softer ones like zucchini and tomatoes.
  • Add the preserved lemons and olives on top for extra flavor.

3. Cooking the Tajine:

  • Pour the water around the edges, being careful not to rinse the spices off the ingredients.
  • Cover the tajine and cook on low heat for 1.5 to 2 hours, checking occasionally to ensure the liquid hasn’t dried out (add a splash of water if needed).
  • The tajine is done when the meat is tender and the vegetables are infused with flavor.
