Kaab el Ghzal: Ingredients and Preparation Method

Kaab el Ghzal, or “Gazelle Horns,” is one of Morocco’s most iconic pastries. These crescent-shaped almond cookies, with their delicate flavor and elegant presentation, are a symbol of celebration and hospitality. They are often served during special occasions like weddings, Eid, or family gatherings, paired with a steaming glass of Moroccan mint tea.


Ingredients for Kaab el Ghzal

For the Almond Filling:

  • Almonds: 500 grams, blanched and peeled.
  • Powdered sugar: 200 grams.
  • Orange blossom water: 2–3 tablespoons.
  • Butter: 1 tablespoon, softened.
  • Ground cinnamon: 1 teaspoon.

For the Dough:

  • All-purpose flour: 500 grams.
  • Butter: 100 grams, melted.
  • Orange blossom water: ½ cup (or as needed).
  • Pinch of salt.

For Garnish (Optional):

  • Powdered sugar or a light glaze (for a modern touch).

Preparation Method

1. Preparing the Almond Filling:

  1. Blend the almonds and powdered sugar in a food processor until finely ground.
  2. Add orange blossom water, softened butter, and ground cinnamon. Mix until a smooth and pliable paste forms.
  3. Divide the almond paste into small portions and roll them into thin logs (about 5 cm long and 1 cm thick).

2. Preparing the Dough:

  1. In a large bowl, combine flour, melted butter, salt, and orange blossom water. Mix until a smooth and elastic dough forms.
  2. Cover the dough with a damp cloth and let it rest for 30 minutes.

3. Shaping Kaab el Ghzal:

  1. Roll out the dough into very thin sheets. Cut into rectangular strips large enough to wrap around the almond logs.
  2. Place an almond log on one end of a dough strip. Roll the dough around it, sealing the edges tightly.
  3. Shape the filled dough into a crescent or horn shape, pinching the edges to ensure they are secure.

4. Baking Kaab el Ghzal:

  1. Preheat your oven to 180°C (350°F).
  2. Place the crescents on a baking tray lined with parchment paper.
  3. Bake for 12–15 minutes, or until the edges are slightly golden. Avoid overbaking to keep the pastry soft.
