Fekkas (or “F9as”) is a traditional Moroccan biscuit known for its crunchy texture and delightful flavor. Often served with tea, Fekkas comes in various versions, from sweet to savory, and is perfect for celebrations, family gatherings, or as an everyday treat. Ingredients for Fekkas
For the Dough:
- All-purpose flour: 500 grams.
- Sugar: 150 grams.
- Vegetable oil: ½ cup.
- Eggs: 3, beaten.
- Baking powder: 1 teaspoon.
- Vanilla extract: 1 teaspoon (optional).
- Milk: 2–3 tablespoons (if needed for softening the dough).
- Salt: A pinch.
Optional Add-ins:
- Almonds: 100 grams, blanched and chopped.
- Sesame seeds: 50 grams, toasted.
- Raisins: 50 grams.
- Orange blossom water: 2 tablespoons (for added aroma).
Preparation Method
1. Preparing the Dough:
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- Make a well in the center and add the beaten eggs, oil, and vanilla extract (if using).
- Mix the ingredients until they come together into a smooth dough. Add milk gradually if the dough feels too dry.
- Knead the dough until it is soft but not sticky.
2. Adding Flavors:
- Divide the dough into portions if you want to add different flavors.
- Mix in almonds, sesame seeds, raisins, or orange blossom water, depending on your preference.
3. Shaping the Fekkas:
- Roll the dough into long, thin logs (about 3–4 cm in diameter).
- Place the logs on a baking sheet lined with parchment paper.
4. Baking the Logs:
- Preheat your oven to 180°C (350°F).
- Bake the logs for 20–25 minutes, or until lightly golden but still soft to the touch.
- Remove the logs from the oven and allow them to cool completely.
5. Slicing and Re-Baking:
- Once cooled, use a sharp knife to cut the logs into thin slices (about 1 cm thick).
- Lay the slices flat on the baking sheet.
- Bake again at 150°C (300°F) for 10–15 minutes, flipping them halfway through, until they are crispy and golden.


Tips for Perfect Fekkas
- For an extra crunch, toast the almonds and sesame seeds before adding them to the dough.
- Store Fekkas in an airtight container to keep them fresh for weeks.
- Experiment with different flavors, such as anise seeds or dried fruits, to create your own unique version.
