Ingredients for Maakouda

For the Potato Mixture:

  • Potatoes: 4 medium-sized, peeled and boiled.

  • Ground cumin: 1 teaspoon.
  • Paprika: 1 teaspoon.

Preparation Method

1. Preparing the Potato Mixture:

  1. Boil the peeled potatoes in salted water until soft and fully cooked.
  2. Mash the potatoes in a large bowl until smooth and lump-free.
  3. Add parsley, garlic, cumin, paprika, turmeric, salt, and black pepper to the mashed potatoes. Mix thoroughly.
  4. Stir in the beaten egg to bind the mixture. If the mixture is too soft, add a little flour.

2. Shaping the Maakouda:

  1. Divide the potato mixture into small portions.
  2. Shape each portion into flat, round patties (approximately 1 cm thick).

3. Frying the Maakouda:

  1. Heat the vegetable oil in a deep frying pan or pot over medium heat.
  2. Carefully place the patties into the hot oil. Fry in batches to avoid overcrowding.
  3. Cook each side until golden brown and crispy (about 3–4 minutes per side).
  4. Remove the maakouda and drain on paper towels to remove excess oil.

  • For extra flavor, add a pinch of chili powder or harissa to the potato mixture.
  • Ensure the oil is hot enough to prevent the patties from absorbing too much oil.
