Rfisa is a traditional Moroccan dish that brings comfort and flavor to the table. Known for its unique combination of shredded msemen (layered Moroccan pancakes) or rghaif, lentils, and chicken, all infused with a rich, spiced broth, Rfisa is often prepared for special occasions, particularly after childbirth, as it is believed to be nourishing and restorative.


Ingredients for Rfisa:

For the Chicken and Broth:

  • Chicken: 1 whole chicken (about 1.5 kg), cut into pieces.
  • Onions: 3 large, finely chopped.
  • Lentils: 1 cup, soaked for 1 hour.
  • Fenugreek seeds: 1 tablespoon, soaked overnight (optional, for authenticity).
  • Fresh parsley and cilantro: A handful, finely chopped.
  • Garlic: 4 cloves, minced.
  • Ground ginger: 1 teaspoon.
  • Ground turmeric: 1 teaspoon.
  • Ground cinnamon: 1 teaspoon.
  • Ras el hanout: 1 teaspoon (optional, for added depth).
  • Salt and black pepper: To taste.
  • Olive oil: 3 tablespoons.
  • Water: Enough to cover the chicken.

For the Base:

  • Msemen (or rghaif): About 10, shredded into bite-sized pieces.

Preparation Method:

1. Preparing the Chicken and Broth:

  • In a large pot, heat olive oil over medium heat. Add the chopped onions and garlic, sautéing until fragrant.
  • Add the chicken pieces, parsley, cilantro, and spices (ginger, turmeric, cinnamon, ras el hanout, salt, and pepper). Stir to coat the chicken evenly.
  • Pour enough water into the pot to cover the chicken. Add the lentils and soaked fenugreek seeds (if using).
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 to 1.5 hours, or until the chicken is tender and the lentils are cooked. Stir occasionally to prevent sticking.

2. Preparing the Msemen Base:

  • While the chicken is cooking, prepare fresh msemen if not already done. Tear the msemen or rghaif into small pieces and set aside.

3. Assembling the Rfisa:

  • Once the chicken and broth are ready, taste and adjust the seasoning if needed.
  • Arrange the shredded msemen on a large serving platter.
  • Pour the hot broth over the msemen, ensuring it is well-soaked. Place the chicken and lentils on top.

Tips for Perfect Rfisa:

  • Fenugreek seeds: These add a distinct flavor and traditional touch but can be skipped if you prefer.
  • Make fresh msemen: Homemade msemen enhances the dish, but store-bought works in a pinch.
